At work we held a "Valentines Day
Sweet Healthy Treat Special". Coworkers had to make a healthy treat to share and they did SOOO well! We had a Low Fat Lemonade Pie, Low Sugar Flan, Fruit in Clouds, Sweet Potato Empanadas, Chocolate Covered Strawberries, Pineapple & Coconut Parfaits, and 7up Cupcakes. These cupcakes were really good! If it was a contest it would have won. The maker got the recipe from a pin I posted on Pinterest :) They were go good I decided to post the recipe in case you are looking for a tasty, healthy recipe.
The cupcakes were so moist, light, and only 160 calories! Plus, there are only 2 ingredients!!
-One box of cake mix (the moist kind is best)
-12 oz can of Diet 7 up
Replace all ingredients on package with 12oz Diet 7-up and bake as directed.
That is all.
